Happy Easter!
Well, Easter in our house seemed to span a few days (maybe it felt like a few weeks). I know the Easter holiday usually does span a few days and as Christians we celebrate for almost a week with Palm Sunday, Maundy Thursday, Good Friday & then Easter Sunday. But this year the week did seem to go a bit slower, maybe it was supposed to.
We had plenty of rain on Maundy Thursday - plenty of rain. Some of us enjoyed the rain more than others.

I made homemade hummus. You can find the recipe I used here. I will probably be making this one again very soon!

We also started some green onions. They've done a bit of growing over the past week...
On Good Friday I made an Easter cake. The cake did NOT make it until Easter though - the girls enjoyed it right after I got the pictures of it. We had part of a cake mix leftover from some other project one of the girls had and about a quarter of a canister of frosting. We made this cute little cake & as I mentioned - it was a hit!
On Good Friday we also fried some fish & shrimp. We made homemade cocktail sauce with ingredients we had on hand - meaning we had no horseradish. The cocktail sauce actually turned out really good though! The recipe is here.
Sunday was a gorgeous and very WARM day! We watched our own church online and watched Sloan's church online as well. We had an Easter brunch that was prepared mostly the day before (but I failed to get a picture of the casserole). We had a little rain come through quickly and it left behind some pretty interesting clouds.

We made a full Easter dinner in the evening! I mean chicken, ham, mashed potatoes, green bean casserole, the WORKS!


We, obviously, didn't make everyone get dressed up, but we still sat at the table, ate on the nice dishes and enjoyed our time together.
We've played lots of games, watched lots of movies and spent time together as a family. The kitchen is almost always clean & I haven't been behind on laundry for a few weeks. As I mentioned at the beginning of this post. It has been a slower pace, but that's not all bad. Maybe it's been needed. I am still thinking about & praying over what might be the intended message from all of this. There HAS to be a positive take away ~ maybe there are many positive take aways.
